Lentil Stew - No SOS!
This lentil stew recipe requires no chopping! It is so easy and fast to make. Better yet, it has no added salt, oil, or sugar! (a.k.a. “SOS”). I must thank fellow YouTuber Dillon Holmes for this recipe.
The best “trick” to this stew is hot water! I have two tea kettles on the stove with filtered water in them heating to below the boiling point. I also have a 4-cup glass measuring cup set out to measure it once I’m ready to add the water to the pot (which is the other pot on the stove).
The photo above shows the assortment of ingredients and spices. The measurements are noted at the end of this post!
All of the ingredients are added to the soup pot before turning on the heat. It’s just a cold pot at this point. Add everything except the water. (You’ll add the water next.)
After all of the ingredients are in the pot, measure 14 cups of hot water into a glass measuring cup and add the water to the pot.
As you add the water to the pot, it looks very soup-y.
Turn on the heat to the high setting.
Bring the stew to a boil. Once it’s boiling, turn down the heat so that it’s lightly simmering.
Put the lid on the pot. Let it simmer for 30 minutes.
After 30 minutes you’ll have this beautiful, delicious stew!
This makes a lot of lentil stew. I freeze about half of it, which is great for when I get busy and don’t have time to cook.
Ingredients:
I’ve changed some of the original ingredients and amounts from Dillon’s recipe.
1/2 cup Dehydrated Onion (I bought it at Costco)
6 ounce can Tomato Paste
1 lb bag Frozen Chopped Spinach
2 lb bag Frozen Carrots & Peas (or 2 - 12 ounce bags)
1 Tbsp. Paprika
2 tsp. Chili Pepper
2 tsp. Coriander
2 tsp. Cumin
1 Tbsp. Ground Ginger
1 Tbsp. Garlic Powder
1 tsp. Cardamom
1/4 tsp. Ground Cloves
3 cups of Lentils, rinsed
14 cups Hot Water
