Avocado "Toast" with Sweet Potato

If you like avocado toast but the bread isn’t a great thing for your diet, my avocado “toast” on toasted sweet potato slices may be just what you’re looking for!


Below is a “fast” video showing how I make these avocado “toasts”, and more recipe details are below:


Recipe:

  • 1 Avocado

  • 1 Tbsp Lemon Juice

  • 1/2 tsp Onion Powder

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Salt-free Seasoning (optional)

  • 1 Sweet Potato (the wider potato is better than a “thin” potato)

Slice the avocado into a bowl and mash it with a fork. Add the lemon juice and spices. Stir together.

Scrub the sweet potato with a vegetable brush under running water and roll it in a clean towel to dry. Slice the potato as shown in the video, into about 1/4 inch thick slices.

If you’re using a toaster oven, pull out the metal tray. Put the slices onto the rack. Every toaster oven varies, so you’ll need to watch the potatoes and toast until the slices start to get a little brown. (For my toaster oven, it takes 10 to 12 minutes.)

Pull out the slices with a fork - carefully! Put them on a plate. Spread the avocado mixture on the potato slices and enjoy!

(If you use a regular toaster, be very careful! You’ll need to put only large round or oval slices into a stand-up toaster and ensure the slices don’t go into the bottom of the toaster!)
